Hells Bay Rum is a Spanish_style dry rum distilled in small batches through a century_old fermentation process with open cypress wood fermenters using a blend of sugar molasses water and two different strains of yeast. The rum is aged for 5 to 7 months in charred new American oak barrels that provide the rum with its rich color and complex profile. Its bottled at 45% ABV. The nose has lightly buttered caramel mild spice mild honey floral notes a touch of vanilla followed by a woody and soft smoke notes from the charred oak barrels. The taste has notes of buttery caramel and charred oak (similar to a bourbon) followed by spice honey and a hint of vanilla. Hells Bay is a semidry smooth medium bodied rum.
